I have read most of the directions and looked at dozens of pictures, but still have not seen what I am looking for. We are currently working on the LS1 rear brakes and have modified the backing plate and reversed the calipers and we plan on deleting the ABS and have noticed there is some sort of sensor (speed or abs not sure) attached to the axle, appears to be gear driven, what is this sensor and can I delete it, if so will I be causing any problems for myself. Something else I haven't seen asked, if you do delete the ABS, does the ABS light stay on? Thanks in advance.

Yes you can delete them.
All it does is tell the computer the rate of speed that the wheel is spinning so it can tell if it needs to intervein or not.
ABS light wont come on if you have everything unplugged from it, i.e. no power going to it.

If you are tallking about the actual serrated ring on the axle, that is the tone ring. I'm not sure if you can remove that. It might be part of the axle, I wasn't really paying much attention to it when I installed my rear discs.
Just ditch all of the electrical when you remove the stock backing plate and you'll be ok.
